The move is pulled pork or fall-off-the-bone ribs, a smoked chicken with white sauce, and a BBQ-topped baked potato, with mac and cheese and deviled eggs alongside. It is a cramped, cash-quick counter joint open Monday through Saturday, closed Sundays.
Founded in 2009 by Mike Wilson in a tiny former Broadway BBQ space, Saw's became the flagship of a beloved local chain and a fixture on 'best BBQ in Alabama' lists. Its bottled sauces now sell in grocery stores across the state.

Saw's BBQ serves North Alabama barbecue — North Alabama barbecue is defined by hickory-pit-smoked meats and, above all, by Alabama white sauce — a tangy mayonnaise, vinegar, and black-pepper sauce invented by Bob Gibson in Decatur in 1925. The signature preparation is a whole chicken split, seasoned, smoked over hickory for about three hours, then dunked in the white sauce, whose mayonnaise fat keeps the lean meat succulent. Pork shoulder and ribs are the everyday staples, with beef brisket a later addition to the pits.
