That move is the brisket biscuit — smoked brisket layered into a tall, fluffy buttermilk biscuit, the fat and bark playing against the buttery, tender crumb. Order the brisket on its own and you get a proper Central Texas cook, dark-edged and oak-scented, with no morning shortcuts taken. Breakfast-leaning sides round it out.
