The engine behind it is pitmaster Tootsie Tomanetz, who has tended pits since the 1960s and starts her fires at 1 a.m. every Saturday to have the meat ready by eight.
The brisket is extraordinarily tender, with a subtlety of smoke that reveals itself over multiple bites rather than shouting on the first. Pork ribs come clean off the bone, and the sausage carries a coarse, honest snap.
