It is a restaurant trying to move the tradition forward without discarding it.
The difference shows on the plate. Heritage pork carries a depth that commodity hogs cannot reach, with intramuscular fat that renders through the long smoke and leaves the meat rich rather than dry. Smoked chicken picks up the pecan sweetness, seasonal greens change with whatever came off the farm that week, and the pecan pie is a fitting local close.
