Pork Barrel BBQ brought a competition pedigree to Summerville's growing food scene when pitmaster Jake Henderson traded the KCBS circuit for a brick-and-mortar in 2018. The competition ribs are the star — St. Louis-style, smoked over cherry and hickory to a balance of smoke, tenderness, and glaze that reads as the product of hundreds of practice cooks. The brisket, while not the SC tradition, is genuinely good and shows Henderson's range, and the pulled pork holds the everyday line. Mac and cheese and peach cobbler round out a plate built by someone who learned to win a judge's box before he learned to fill a dining room.
