Sisters Deborah and Mary Jones run Jones Bar-B-Q out of a small building in Kansas City, Kansas, and a James Beard America's Classics award put a national stamp on what KCK locals had known for decades. The operation is tiny, the hours run until sold out, and the quality is anything but small—this is hand-built barbecue with a national honor and no pretense to match it.
The ribs are the star, deeply smoky and tender, carrying the muscle memory of decades spent at the pit. Pulled pork and brisket follow close behind, soulful and unhurried, and the house sausage is worth grabbing before the daily count runs out. Get there by late morning, because the sellout is real and it comes early. This is some of the most soulful barbecue in the metro, made by two sisters who have earned every bit of the acclaim.
