Snead's has smoked in Belton since 1956, still working the brick pit founder Bill Snead built with his own hands—one of the oldest continuously operating barbecue joints in the metro. The south-metro location keeps it a little off the tourist track and squarely in the hands of the regulars who have eaten here for generations, right where they like it.

The signature is the 'brownies': crispy, burnt-end-style brisket and ham trimmings you won't find under that name anywhere else in the city. Beyond them, the burnt ends, sliced brisket, and a hearty beef sandwich all carry an old-school logburner flavor that modern gas-assist pits simply can't fake. This is heritage Kansas City barbecue, brick pit and all—smoke pulled straight off burning wood, the way it was done here before most of the metro's pits existed. Come for the brownies; they're the whole reason.
